Marshmallow Bar

Oven temperature: 190 degrees Celsius

Cooking time: 15 minutes

Soaking time: 5 minutes

Boiling time: 5 minutes

Cooling down time: 30 minutes

Refrigeration time: 6 hours - overnight

 

Utensils:

Electric mixer with large bowl

Tablespoon

Teaspoon

Measuring Cups

Medium bowl

Rectangle tray

Baking paper

Small pot

Marshmallow Ingredients:

1 heaped tablespoon of Gelatine

1 cup of Castor Sugar

1 cup of Water

1 tspn of Vanilla Essence

Base Ingredients:

3 Weetbix

1 cup of Fine Desiccated Coconut

½ of Castor Sugar

125g of Melted Butter

(You cannot substitute with Margarine)

1 cup of Self Raising Flour

Method:

1) Preheat the oven to 190 degrees Celsius. Place 3 Weetbix into a large bowl then crush with your hands. Add coconut and stir. Then add sugar and flour and stir though.

2) Melt 125g of butter in the microwave then pour into your mixture and stir throughly then combine with your hands.

It may seem too dry, but that’s exactly how it’s meant to be.

3) Line your tray with baking paper then grease with oil.

Pour mixture into the tray then press down firmly with the back of your spoon.

Place into the oven for 15 minutes – don’t forget to turn the tray around at the 7 minute mark so both sides cook evenly.

4) Soak the gelatine, water and sugar in a medium sized bowl for 5 minutes.

5) Pull the base out of the oven and put to the side to cool down. Boil the marshmallow ingredients in a small pot for 5 minutes,

then place into your large mixing bowl and set aside to cool down for half an hour until it turns hard.

6) Once the marshmallow mixture is cooled, add 1 tspn of vanilla essence.

Place the mixing bowl onto your electric mixer and turn on the highest setting for 10 minutes.

It will start off being a brown colour but will soon turn white on its own.

You will need to scrape down the sides pretty much the entire 10 minutes – especially towards the end.

7) After the ten minutes is up, pour your marshmallow mixture onto your base and smooth down as much as possible.

Cover with sprinkles and then wrap aluminium foil over the tray. Place in the fridge overnight - or at least 6 hours.

When it’s time to take it out of the fridge, leave it on the bench for 5 minutes before cutting it into strips/pieces.

This was my first time making this recipe (my Nan used to make it for birthdays) and I’m so happy with how it turned out,

especially considering her instructions were so hard to follow – I hope you find mine easier to understand.
