Fudgy Wudgy Chocolate Chip Cookies

* Before I start I just want to apologise for the lack of photos, it was really late at night when I decided to make these and I completely forgot to take photos of everything, so I will add those in next time I make this recipe.

Cooking time: 12-15 minutes

Oven temperature: 180 degrees Celsius

Mixer Speed: Medium-High

 

 

Utensils:

Cooling Rack

Electric Mixer with Large Bowl

Tablespoon

Teaspoon

Measuring Cup

Baking Tray

Sifter

Ingredients:

1 and ¼ cup of Brown Sugar

125g of Softened Butter

1 tspn of Vanilla Essence

1 Egg

1 cup of Plain Flour

¼ cup of Self Raising Flour

1 tspn of Bicarb Soda

1/3 cup of Nestle Cocoa Powder

½ cup of Nestle Dark Chocolate Bits

½ cup of Nestle Dark Chocolate Melts

 

* For this recipe I used Cadbury because they were sold out of Nestle and seriously regretted it. If they don’t have Nestle, just wait until they do!

Optional Ingredients:

¾ cup of chopped Macadamia Nuts

½ cup of Raisins or Sultanas

 

* I personally don’t use these – however my mum does when she makes this recipe, so it’s upto you. If you do use them, just add them when you add in the chocolate.

Method:

1) Preheat the oven.

Place the brown sugar, butter, egg and vanilla essence into your large bowl.

Using the electric mixer - beat until smooth.

 

2) Next, sift the plain flour, S.R. flour, Bicarb soda and cocoa powder into the large bowl. Using the electric mixer again – beat until combined.

3) Add the dark chocolate bits and melts to your large bowl. (And the ‘optional ingredients’ if you wish to include them). Mix with a spoon – NOT the electric mixer.

4) Place generous blobs of the mixture onto a well-greased tray (with oil not butter) then place into the oven for 12-15 minutes.

Once they are done, let them sit on the tray for 5 minutes before moving onto a cooling rack. Once they are solid you can serve them.

They will last for roughly a week if kept in an air-tight container. They also freeze well for roughly upto a month.
